Spiced Carrot and Turnip Puree Soup
Spice up your Winter with this carrot/turnip puree soup!

  1. 2lb Carrot
  2. 1lb Turnips
  3. 1 med onion
  4. 1 stalk celery
  5. 1 bay leaf
  6. 1 Tbl Thyme
  7. 1 Tbl Cinnamon
  8. 1 tsp allspice
  9. 1 tsp cloves
  10. 1 tsp nutmeg
  11. 1 Tbl salt
  12. 1 tsp black pepper
  13. 1/4 cup olive oil
  14. Water
  1. Clean and cut all the vegetables into 1” pieces
  2. Sweat all the vegetables over a low flame in the olive oil and the spices
  3. Once all the vegetables are soft fill the pot up to the top of the vegetables with water
  4. Bring to boil
  5. Ladle into blender (search for bay leaf in the process and remove)
  6. Puree until a smooth consistency has been achieved
  7. Serve hot and garnish with thinly sliced carrot
