Cheesy Broccoli Potato Cakes

Serves 8
Ingredients
- 1 medium potato
- 1/2 cup broccoli, minced
- 1/2 cup cheddar cheese, shredded
- 1 tsp garlic powder
- 2 eggs
- 1/2 cup breadcrumbs
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup vegetable oil
For the Aioli
- 1/2 cup mayonnaise
- 1 tsp garlic powder
- 1 tbls cilantro, minced
Instructions
- Boil the potato and shred while its still warm to the touch. Mix the shredded potato with the next 7 ingredients.
- Form the mixture into 2 ounce patties.
- Heat the oil over medium flame and sauté for about 5 minutes on each side - do not burn!
- Serve with Cilantro Aioli.
For the Cilantro Ailoi
- Combine the 3 ingredients in a bowl and whisk together.
Notes
- You can substitute zucchini, asparagus, kale, sweet peppers or Swiss chard for the broccoli.
- You can substitute mozzarella, chèvre, blue cheese or asiago for the cheddar.
