Cheesy Broccoli Potato Cakes

Ingredients
  1. 1 medium potato
  2. 1/2 cup broccoli, minced
  3. 1/2 cup cheddar cheese, shredded
  4. 1 tsp garlic powder
  5. 2 eggs
  6. 1/2 cup breadcrumbs
  7. 1 tsp salt
  8. 1/2 tsp pepper
  9. 1/4 cup vegetable oil
For the Aioli
  1. 1/2 cup mayonnaise
  2. 1 tsp garlic powder
  3. 1 tbls cilantro, minced
Instructions
  1. Boil the potato and shred while its still warm to the touch. Mix the shredded potato with the next 7 ingredients.
  2. Form the mixture into 2 ounce patties.
  3. Heat the oil over medium flame and sauté for about 5 minutes on each side - do not burn!
  4. Serve with Cilantro Aioli.
For the Cilantro Ailoi
  1. Combine the 3 ingredients in a bowl and whisk together.
Notes
  1. You can substitute zucchini, asparagus, kale, sweet peppers or Swiss chard for the broccoli.
  2. You can substitute mozzarella, chèvre, blue cheese or asiago for the cheddar.
