Curried Broccoli Soup
This curried vegetable soup is a great way to welcome the Fall season.

Ingredients
  1. 1 oz vegetable oil
  2. 5 lb broccoli, chopped
  3. 1 med onion, diced
  4. 1/2 lb carrot, chopped
  5. 3/4 lb bell pepper, chopped
  6. 3/4 lb potato, chopped
  7. 1 Tbl basil, chopped
  8. 1 Tbl cilantro, chopped
  9. 1 stalk lemongrass, chopped
  10. 1 finger ginger, chopped
  11. 1 13.5oz can coconut milk
  12. 1/4 cup lime juice
  13. 1.5 cups apple juice
Instructions
  1. Sweat broccoli, onion, carrot, bell pepper and lemongrass in the oil. Add remaining ingredients and simmer until potatoes are soft.
  2. Puree in a blender and serve warm.
