Curried Broccoli Soup

This curried vegetable soup is a great way to welcome the Fall season.
Ingredients
- 1 oz vegetable oil
- 5 lb broccoli, chopped
- 1 med onion, diced
- 1/2 lb carrot, chopped
- 3/4 lb bell pepper, chopped
- 3/4 lb potato, chopped
- 1 Tbl basil, chopped
- 1 Tbl cilantro, chopped
- 1 stalk lemongrass, chopped
- 1 finger ginger, chopped
- 1 13.5oz can coconut milk
- 1/4 cup lime juice
- 1.5 cups apple juice
Instructions
- Sweat broccoli, onion, carrot, bell pepper and lemongrass in the oil. Add remaining ingredients and simmer until potatoes are soft.
- Puree in a blender and serve warm.
